Would it be possible for a borrower to have the ability to temporarily borrow the knacks of others around them? (I’m thinking something like their own knack being the ability to use the knack of the last borrower they touched.)

I’m sure it’s possible, but it would be a knack that takes a toll on its user more than a regular one would. Borrowers aren’t quite X-men level with their abilities. They come with severe disadvantages and start out weaker to begin with. 

Determining your own knack is hard! I would want mine to probably be based off of my favorite super power: telepathy. I don’t know entirely how, but I would likely be sensitive to the thoughts of others around me.

It’s a very useful ability to have if you’re worried the human might have heard you. You’ll be able to ‘hear’ if they’re considering seeking you out or if they just wrote the sound off as just the house settling.

Also, if you get bored and are strong enough, you can always get into someone’s head and make them think they’re hearing voices. Get them to leave out a snack or two for you if you need some food for the week.
